Strawberry Hazelnut Cake


This is our 18th bake at The Home Bakers where all of us in the group are baking every single recipes from the book, Coffee Cake By Lou Seibert Pappas and now we're almost half way there. Just like Kit mentioned, i guess not many of us have actually baked so many recipes out from the same book. I'm actually now one bake behind, currently my fellow friends at THB already doing their 19th bake..ok, i'm catching up.


The original recipe supposed to be a marionbery hazelnut cake but we can choose to use any berries or combination of berries either with hazelnut or almond meal. I have chosen strawberry and hazelnut and baked them in cupcake form . I had halved the recipe and it comes to about 5-6 muffin sizes cakes. Some changes i made to the original recipe were i did not add reduced the sugar to 80gm, skipped the nuts and did not make the sugar crust topping. Am still glad with the outcome of the cake.     Your cupcake looks lovely in the pretty cupcake cases! Yeah, I guess most of us have not baked more than a dozen recipes from a single book before! :)

  8. Lena, I want to eat your strawberry hazelnut cake. So far only have nutella spread but not the hazelnut itself, not sure how it actually taste like. The cupcake liners look very cute!

  9. Lena , when I saw your photos , I told myself , I thought they're currently baking the bundt cake ?! lol Anyway , those cupcakes are pretty as a picture ! The moist and nutty cakes with fresh strawberry topping look really yummy . Love the liners :D

  11. oh i love the little cake/cupcake wrappers you used. Soooooo cute and these cakes are amazing. The combination of strawberry and hazelnut flavors are a perfect addition.

  16. A terrific dessert for 'gluten free' guests. It will also be a wonderful treat for friends and family who enjoy meringues. Read the 'reviews' in-order-to pick up any necessary tricks. Follow every step in the directions - to avoid any errors. Very nice treat!

  22. I am a big fan of baking with less flour but with more nut meal so this certainly appeals to me! Besides, who needs more sugar with sugar crust right? :)

  23. Yummy cupcakes in lovely cup cakes paper holder. I brought back some really pretty ones from USA but won't be using them for a while. Have to wait till my foot is fully healed before I start baking:)
