Chicken with Cashew Nuts

Chicken with cashew nuts is not something uncommon , i've cooked this several times at home, using a mixture of ketchup sauce and some oyster sauce. You may find that my version here is a little different, well..when i first cooked this, it was just a matter of trying out and seems that i liked it. It tasted a little bit like the chinese kung pao chicken but i dared not name it as kung pao chicken otherwise you may think the recipe is a little odd.

190 chicken breasts/fillet, cleaned and cut into cubes, marinate with a pinch of salt and 1/2 tsp of tapioca flour
50gm cashew nuts, toasted in wok
1 clove garlic, roughly chopped
1 medium size onion, cut into wedges
3 baby corns ( optional )
1/2 piece of capsicum, cut into wedges
5 pieces of dried chillies , soaked for 15 minutes
1/2 tsp sugar
2-3 tbsp of water
1/2 cup of cooking oil
coriander leaves ( optional)

1tbsp ketchup sauce
1tbsp oyster sauce
1tbsp water

1. Marinade the chicken with a little salt and tapioca flour for 15 minutes.
2. In another bowl, mix the sauce ingredients and set aside.
3.Pour the oil into the wok and cook the chicken till they are slightly brownish, takes around 8-10 minutes.
4.Remove the chicken and leave about 1 tbsp of oil in the wok. Put in the dried chillies, garlic, onion and saute for about 1-2 minutes, Throw in the capsicum and baby corns and return the chicken cubes into the wok. Pour in the seasoning and stir fry for another 2 minutes. Add 2-3 tbsps of water if you find them a little dry. ( taste and see if you need to add salt)
5.Add in the cashew nuts and  coriander leaves, give them a quick toss and dish up.

  5. Kung po style chicken is one of my all time favourite. Always order it whenever I eat at Esquire Kitchen.....more cashew nuts....nice!

  10. This dish looks too good, beautiful and colourful. I didn't get an electric oven. I start making cake with steamer and rice cooker now. By the way, I have a halogen convection oven which I still need time to explore.

  18. Lena, my mother-in-law used to cook this dish very often till my son is old enough to eat what we are eating, then she has stopped cooking this dish for us. Reason is it contains nuts there. My son is allergic to peanut & hence, we haven't let him tried cashew nuts yet. This dish won't taste the same without them! I miss this dish very much!

  27. one of my faves. but i normally replace the cashew nuts with pine nuts and macadamia since cashews do cause my eczema to flare up:-(

  30. Eh..I think that's how they do Kungpao chicken over in US, with cashew nuts.
    But not here.
